National Architecture Week - Hawaiian Bros Island Grill

We're celebrating National Architecture Week by asking some of our team members to share their most beloved projects. Architect, Jon Doll, chose to highlight the Hawaiian Bros Island Grill in St. Joseph, MO.  
 
Jon enjoyed getting a chance to work with a lot of vibrant colors and a variety of building materials, the two blend perfectly to create a bold and eye-catching restaurant that fully embraces the Hawaiian Bros island flair. The biggest challenge faced was figuring out a way to reduce the building size while keeping the kitchen efficient and maintaining a spacious dining area for customers.  
 
In the end, Jon and the team created an optimized building footprint. The dining area remained unchanged, but the kitchen itself was shrunk down and re-designed to bring greater efficiency. Within the kitchen, the amount of equipment was strategically reduced, facilitating smoother workflows between prep, cooking, and serving stations, therefore minimizing interior traffic and staff movement. The result was a kitchen design that helps Hawaiian Bros serve their guests quickly.
